Eckhoff begins his fourth year at UWSP in 2025-26 and his responsibilities include corporate partnerships, external marketing, game day atmosphere and individual team sport budgeting.

Previously, Eckhoff owned the Wisconsin Woodchucks for 15 years. He helped lead the organization to two Northwoods League titles as well as growing the average attendance annually by over 200% during his ownership. Most recently, Eckhoff owned and operated the Valley Blue Sox of The New England League from 2012 through 2018. The Blue Sox went on to win two New England League titles in 2017 and 2018. The Blue Sox attendance soared by more than 300% during Eckhoff's ownership and in 2017 the Blue Sox ranked 10th in the country in Summer Collegiate Baseball average attendance out of more than 180 other Summer Collegiate teams. Eckhoff's teams have produced over 30 Major Leaguers and over 200 players drafted by MLB teams.
 
During Eckhoff's ownership of the Wisconsin Woodchucks he was greatly involved in the Central Wisconsin community. He served as a board of director for The Boys and Girls Club of Wausau area as well as a board of director for Big Brothers Big Sisters of Marathon County. Additionally, Eckhoff served as a director of the North Central Mendota Gridiron Club which raised funds for Wisconsin Badgers football for over two decades.
 
Eckhoff received his undergraduate degree in business administration from UW-Stevens Point and his MBA from UW-Madison in 2000.
 
Eckhoff currently resides in Weston with Wendy and has three daughters, Kelley, Ashley and Ella.
